Veal bundles with truffles

Pound the steaks with a meat malleet until thin and even, season with salt and sprinkle with a few shavings of truffle and Parmesan. Fold in half and press down well all around the edges. Beat the eggs with a pinch of salt in a shallow dish. Spread out the breadcrumbs in a nother shallow dish. Dip each steak bundle into the beaten eggs and then into the breadcrumbs. Melt the butter in a frying pan, add the steak bundles and cook, turning frequently, for 10 minutes.

  • 1 white truffle, thinly shaved
  • 25 g / 1 oz Parmesan cheese, thinly shaved
  • 2 eggs
  • 80 g / 3 oz breadcrumbs
  • 40 g / 1  1 /2 oz butter
  • salt
