Lamb cutlets with anchovy butter

Preheat the grill. Brush the cutlets on both sides with olive oil and grill for 4-6 minutes on each side, depending on how well done you like your  lamb. Season with salt, transfer to a serving warm dish and dot with the anchovy butter.

 

Anchovy butter:

Cream the butter in a bowl. Beat in the anchovies, then beat in the anchovy paste.

Serves 4

  • 8 lamb cutlets
  • olive oil
  • 1 quantity Anchovy butter
  • salt

 

For the anchovy butter:

  • 100 g / 3 1/2 oz butter, softened
  • 50 g / 2 oz salted anchovies, heads removed, cleaned and filleted and finely chopped
  • 1 teaspoon anchovy paste
