VARIETAL COMPOSITION: 56% Chardonnay, 36% Pinot Noir (pressed for white wine), 8% Sauvignon Blanc
VINIFICATION: The Pinot Noir undergoes crushing and destemming before the must is extracted in a very gentle pressing. Juice from the three varietals is vinified separately. Blending takes place only after the wines have fermented and matured for seven months in barrels of new (55 %) and one-year old (30 %) French oak. Furthermore, part of the Chardonnay and Sauvignon Blanc are refined in stoneware containers, a material similar to natural granite.
ALCOHOL CONTENT: 13% Vol.
COLOR: Brilliant and intense straw tinted yellow.
BOUQUET: Elegant, harmonious and complex. Hints of citrus fruits, with roasted notes of cocoa and light nuances of herbs.
PALATE: Well-bodied, elegant with a good balance, well-structured. Persistent and mineral at the finish.
SERVING TEMPERATURE: 12 - 14 °C
AGING: The Sassi Grossi Bianco 2019 will reach its full expressive potential beginning in spring 2021 and will continue to develop in character through 2026 and beyond if properly cellared.
