| Winemaking: | Harvested only at the peak of maturity, the grapes are left to dry on palettes in specially thermoventilated chamber in order to obtain fruit of optimal concentration. The fruit is then carefully separated from the stems by hand and subjected to a gentle pressing. The extracted must is fermented and matured for 20 months in barrels of new French oak | |
