| Winemaking: | The Pinot Noir undergoes crushing and destemming before the must is extracted in a very gentle pressing. Juice from the two varietals is vinified separately. Blending takes place only after the wines have fermented and matured for nine months in barrels of new (70 %) and one-year old (30 %) French oak. Between alcoholic and malolactic fermentation the lees are stirred (bātonnage) 1 to 2 times weekly | |
